Broccoli Rabe with Caramelized Onions

Yield: Serves 4-6
Ingredients:
- Olive oil
- 1 onion, sliced into slivers, lengthwise (with the grain)
- pinch of sugar
- 1 large bunch of broccoli rabe, rinsed and cut into 2-inch long pieces
- 2-3 garlic cloves, sliced
- 1/4 teaspoon red chili flakes
- Salt
- parmesan cheese
Directions:
- Heat 2 Tbsp oil in a large sauté pan on medium heat.
- Add onions and sprinkle with a pinch of sugar and cook until softened and lightly browned. (about 15 minutes)
- Blanch the rabe by boiling it in salted water about 5 minutes or until tender and immedately putting putting in ice water. NOTE: Rabe can be rather bitter, so blanching will help take the edge off of the bitterness.
- Drain and use paper towels to remove moisture.
- Remove the cooked onions from the pan and add another Tbsp of olive oil and heat the pan on high heat.
- Add the chili flakes.
- Saute garlic 1-2 minutes.
- Stir in the broccoli rabe and the onions and saute 10 - 15 minutes
- Dust with parmesan cheese.
